Valentine’s Day is approaching quickly, and while other sites are chock-full of chocolates, heart-shaped treats and beautiful confections, Baking & Babies is slightly less…sophisticated.

Instead, I thought I’d share a recipe for the less girly among you. For those who have a man to bake for, or just appreciate a great slab of pork. These aren’t fancy. They don’t take hours of work, and they probably won’t look amazing in a heart-shaped box with tissue paper. But they taste damn good, and any bacon-lover will appreciate them. Bacon Chocolate Chip Cookies

1 lb bacon, cooked until crisp and chopped
3/4 cup softened butter
3 tbsp reserved bacon fat
1 cup brown sugar
1/2 cup white sugar
2 eggs
2 cups flour
1 tsp baking soda
2 cups chocolate chips

In the bowl of a mixer, cream together butter, bacon fat, and sugars. Add eggs one at a time, mixing until incorporated and fluffy. Add vanilla. Whisk together flour, baking soda and salt, then add dry ingredients to wet ingredients. Stir in chocolate chips and bacon.

Scoop by the tablespoon-ful onto a non-stick cookie sheet, and bake at 350 degrees for 12 minutes.

Though the recipe calls for a whole pound of bacon, no one will notice if a few stray slices get eaten before they make it into the cookies.
