Sunday was Father’s Day, and if there’s one thing my dad always requests, its chocolate. He doesn’t much care what form it comes in, just so long as there’s a chocolatey kick (and no lemon, blueberry, mint or pumpkin involved).
I needed something relatively uncomplicated, because between a wedding Saturday afternoon/evening and church Sunday morning, I had next to no time to whip something together.
Behold…a treat that has been lovingly dubbed…
1/2 cup butter
1 cup flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
8 ounces semi-sweet chocolate (or chocolate chips)
1 1/4 cups sugar
3 large eggs
12 Oreo cookies
In a small bowl, stir together flour, cocoa powder, baking powder and salt. In a large, heatproof bowl (either over a pan of water, or in the microwave) melt together the butter and chocolate. Stir well to combine. Add sugar to the chocolate mixture, and beat until smooth. Let cool slightly. Add eggs one at a time, mixing until fully incorporated. Add the flour mixture to the chocolate, and stir just enough to moisten the batter – don’t overmix or they will come out flat.
Pour half of the batter into a greased 9×9 pan, smoothing it out. Layer the whole Oreo cookies over the batter, pressing them in slightly. Top with the remaining brownie batter. Bake at 350 for about 50 minutes, or until a toothpick comes out with just a few crumbs clinging to it.
These brownies are in such high demand, that sometimes, you don’t have the time to whip up the entire recipe. So, guess what? This will work with any store-bought brownie mix as well. In fact, I’d venture to say that they’re JUST AS GOOD with a box mix. I made them this way on Father’s Day, and they were delicious. So don’t panic if you’re not a baker. You can buy a bag of cookies and a box of mix, and you’re set. Enjoy!
