Okay, so this doesn’t exactly count as ‘baking’. But, to my credit, it was in the oven, it was baked, and I consumed far more of it than I should have. That sounds like every other recipe I’ve posted. Plus, its a trial run to see if you guys are open to things other than baked goods…please tell me honestly if you’re not!
6-8 Italian sausages (mild or hot)
1 cup cooked rice
4 bell peppers (plus one for chopping)
1 small onion, diced
1 can crushed tomatoes
2 cups mozzarella cheese, shredded
salt and pepper
In a frying pan over medium heat, split the sausage casings and remove the meat. Fryin until browned and cooked through. Add onion and bell peppers, continue to cook until softened. Pour in crushed tomatoes, add chili powder, salt and pepper, and cook until reduced slightly.
In the meantime, cut the tops from the peppers, and scoop out seeds and membranes. Place hollowed peppers in a baking dish. Fill halfway with sausage mixture, add a good sprinkle of mozzarella cheese, then add another layer of sausage mixture. Top with a heap of mozzarella cheese.
Bake in a 375 degree oven for about 20 minutes, or until peppers have softened a little and cheese is melted.
Note: in the picture, I topped the peppers with ricotta cheese, because it’s what I had on hand. This is delicious, but mozzarella is more family- and budget-friendly.
