Back to Reality…slowly.

I promised you a recipe for those brownies, and I’ll deliver on my promise. As soon as I update you on my life. If you’d like, skip ahead, make the brownies, then come back here for the update once you have one in your hand. I won’t judge. I might just do the same thing.

This week was heaven. J and I decided back in March that we would take a week of holidays together, and rather than try to plan something hectic and busy, we would head to my parents’ place. They have a pool, they’re close to a ton of shopping, and its our hometown, so there would be lots of catching up to do. Plus, while we were there, we planned on celebrating our anniversary in style – at the Scandinavian baths. If you’re not sure what that entails, look it up, you’ll thank me. I’d link directly to the one we went to, but I don’t want to give away too much by way of my location (because I’m SUCH a private person, ha ha).

We lounged. We shopped. We ate. We spent entire days by the pool. I ditched my thermometer, my charting apps, my obsessions over TTC, my hangups about Mothers’ Day. I just let it all go, and genuinely enjoyed the time that J and I had together.

We have one more day before we’re headed back to reality (a new job for me, a crazy week for J), and I’m so thankful for the incredible husband and family that I have. I’m thankful for my health (my mother is battling fibromyalgia, like myself, and it affects her so much more. I thank God every day that I’m not afflicted quite so badly.) I’m thankful for the chance to recharge my batteries. I’m thankful for a hundred thousand things, and I think I’ve finally gotten my perspective back.

If we don’t get pregnant soon, I’m doing okay. I’m content. I want a baby badly, more than just about anything. But I’m doing okay. And things are turning out just fine.

 

Chocolate Chip Cookie Dough Brownies

 

Okay, so I’m a big fat cheater. When I made these brownies last week, I was in a major rush. And while I was shopping for ingredients, my FAVOURITE box brownie mix was on sale for $0.99 (yes, I have a favourite box-brownie mix. Don’t tell). So, rather than bake brownies from scratch, which I’m normally all for, I cheated. A little.

That being said – if you are running short on time, or if you don’t have the ingredients on hand for brownies, or if, like me, you just LOVE brownies from a box…don’t despair. These are still delicious. And super quick.

Ingredients:

YOUR FAVOURITE BROWNIES – boxed, homemade, storebought, whatever.

3/4 cup butter (I used salted)
3/4 cup brown sugar
3/4 cup white sugar
1/4 cup milk
1 tsp vanilla
1 1/2 cups all-purpose flour
1 cup chocolate chips

In a 9×9 pan, bake your favourite brownies. Mine are Duncan Hines, and they’re super easy to mix together and bake. This should probably take about 30 minutes, depending on your recipe. Remove from oven. COOL COMPLETELY.

While the brownies cool, grab a bowl. Cream together butter and both sugars until light and fluffy. Add milk and vanilla until incorporated. Slowly add flour, and beat until thoroughly combined and fairly thick. Stir in chocolate chips.

This can be eaten straight-up, as a “safe” raw cookie dough. But here comes the good part. Grab your cooled pan of brownies, and slather them with the cookie dough mixture. A thick layer is best. Refrigerate for at least an hour, until the cookie dough is firm. Then slice and serve, and all of your friends will thank you forever.
