Ovu-Lime Bars

After a 35 day wait, I finally got a temperature spike this morning. Our timing wasn’t fantastic, but that’s okay. At least I know that my body is sort of cooperating. And I’m pretty sure that those naturopathic remedies I started at the beginning of this cycle WILL NOT be happening again next cycle. There’s no way in hell I’m going to go through another 50 day cycle for no reason.

So, to celebrate, here’s what I made. They’re summery and fun – perfect for that April day that you wake up and there’s SNOW on the ground (last week, it happened. Promise).

Ovu-Lime Bars

Ingredients:
2 cups flour
1/2 cup powdered sugar
1/2 tsp salt
1/2 cup unsalted butter, cubed

1 1/3 cup lime juice
2 1/2 cups sugar
1/2 cup flour
8 eggs
green food colouring
powdered sugar

In a bowl, whisk together flour, powdered sugar and salt. Cut in butter until the mixture is blended and looks like cornmeal. Press into a greased, lined 9×13 pan. Bake in a 350 degree oven for 20 – 25 minutes, or until golden around the edges.
While this is baking, whisk together eggs and sugar until combined. Stir in lime juice, flour and green food colouring (if desired) until thoroughly combined.
When crust is baked, pour filling over top and bake for 25 minutes more, or until the filling no longer jiggles. Cool completely and cut into squares.
