This week was one of the most stressful of my life. Our bad news was made worse when we got the call 6:00 am on Thursday, informing us that J’s father hadn’t made it through the night.
We’ve been running on adrenaline ever since. We’re devastated and heartsick, and in this time of mourning, two things have fallen by the wayside: baking and babies.
I test tomorrow morning to see if W did indeed get to ‘meet’ his grandchild (I’m a week late, so if I am pregnant, I was before he passed).
And on the baking front, here’s a Dutch apple pie that’s delicious and comforting.
Dutch Apple Pie
1 pie crust, store bought or homemade
4 large apples, (i used Macintosh)
1 brick cream cheese
1/2 cup brown sugar, divided
1 cup rolled oats
1 cup flour
1/2 cup butter, cubed
In the bowl of a mixer, beat cream cheese until smooth. Beat in egg and vanilla extract. Spread into bottom of pie shell.
Peel and slice apples, tossing then with cinnamon, half of the brown sugar, and two tablespoons of flour. Pour on top of cream cheese mixture.
Whisk together flour, and brown sugar, and work in butter with fingertips until crumbly. Spread on top of pie.
Bake at 350 for about 55 minutes, covering for the first twenty and then uncovering for the remainder.
